My Whole30 - Day 7

Yes. That's exactly what I needed to hear at the end of my Day 7! Man, I love those emails!

As I mentioned in yesterday's post, I was pretty stoked about my results in just one week. The excitement definitely fueled my desire to keep going! Despite what others may think, this is not a diet. It's a lifestyle change to eat good, real food. Do you see any problem with that? Nope, me either.

DAY 7 - WHOLE30 EATS

I went for a large breakfast of a banana with almond butter (no sugar added-it was okay), 1 egg fried in coconut oil, and a few fresh tomatoes.


I didn't need to eat again until about 2:30pm where I enjoyed a wonderful spinach salad with cucumbers, tomatoes, left over beets, and some quick balsamic chicken. Very good. I didn't enjoy the beets cold as much as I do when they are warm. Lesson learned!


After work, I went for a quick walk/run around my neighborhood since I missed the 5:15pm cycling class. It kinda sucked because I managed to get three bug bites on my feet over the weekend so they were extremely uncomfortable in my sneakers! Grr. Hope they go away fast!

Now, dinner time was an epic win! We had purchased a pound of lean, ground, grass-fed beef and decided to do taco night! One of my favorites! Instead of taco shells, I decided to use red pepper halves! Check it out:

The whole spread. I ended up only eating two halves (1 whole pepper) since I was too full! You can pile on A LOT more food into that red pepper than a regular taco shell!
I posted my "taco" masterpiece on Facebook last night and my dear friend Lindsey asked for the recipe. This is for you girl!

The meat: In a large saucepan, I cooked 1 lb of ground beef and seasoned with sofrito (cilantro, onion, garlic,  green pepper), salt, pepper, oregano, cumin seeds, bay leaf, a few spanish olives (chopped), and a few capers. Once the meat was no longer pink, I added a small can of tomato sauce (all natural, due to the program). While that simmered on low, I prepped the rest of our toppings.

NOTE: Since our ground beef was super lean (93/7), I had to add a little bit of coconut oil to the pan to prevent sticking. With regular 80/20 or even 85/15, you won't need to do that.)

Red pepper shells: I cut the red peppers from the top down and removed the stem and seeds. No cooking required.

Salsa: I typically make my own salsa, but I was pressed for time so I picked up some freshly made salsa at the supermarket.

Guacamole: To make a quick guacamole, I added maybe 3-4 heaping spoonfuls of the salsa to 2 ripe avocados. Mixed up and seasoned to taste with salt and pepper.

Other toppings: Diced red and yellow peppers, finely chopped romaine, diced red onion.

Assembly: PILE EVERYTHING INTO THE RED PEPPER HALF AND CONSUME. I added the romaine first, then the diced peppers and onion, then the meat, topped off with the guac and the salsa.

Verdict: Despite being a little bit messy, it was awesome. The red pepper provided a great crunch and all of the flavors came together for a wonderful meal. We will probably make this a weekly favorite!

My Whole30 - Week 1 Results

The

I know, I know. The Whole30 program rules say that I cannot weigh myself or take body composition measurements until the full 30 days are over. But I couldn't wait.  If this is the one rule I'm breaking, I think I'm okay. 

The last time I weighed myself was on Monday, July 30th. I have a fancy scale that also sends electric currents through my body to determine Body Fat %, Water %, Muscle Mass and BMI. 

I am happy to report that in the last 7 days, I have improved in ALL of those categories. Woot. Woot. 

As of this morning, Tuesday, August 7th, I am down THREE POUNDS. I officially weigh less than I did on my wedding day. I am so thrilled to be past that number so that I can now focus on the next goal. FEELING GREAT.

I also improved in the following areas:

BODY FAT % - DECREASED BY 1.3%
WATER % - INCREASED BY .5%
MUSCLE MASS - INCREASED BY .3
BMI - DECREASED BY .6 

FEELING DOUBLY GREAT.

My Whole30 - Day 6

The

This morning I woke up exhausted, probably from the action packed weekend and all of the driving. I missed my early morning Spin class and kept snoozing. After I got my butt in gear, there was a ton of stuff to do for work and I didn't get a chance to make breakfast. The fridge was pretty empty and I needed to get to the grocery store fast. My original plan was to go to the grocery store after the 6:30am Spin, but like I said, that never happened. So my energy was low, I was feeling kind of lazy, and I had a couple of thoughts of going off Whole30.  

Oh, normally on days like this I would just make some toast with PB.
 That would be easy right now. 
Or grab a quick bowl of cereal, that would have been nice. 

I tried my best to rebuke those thoughts.

DAY 6 - WHOLE30 EATS

Since I needed to quickly put something good in my mouth before I threw some bread in the toaster, I went for one of the Larabars I had picked up the day before at Whole Paycheck Foods in MA.

Lemon bar was REALLY good. I liked it better than the "Banana Bread" one I tried previously.
The Larabar didn't hold me over too long, so I was ravenous by 11:30am. At this time, I was a little less crazy as I tried to come up with a good lunch meal. I found some frozen broccoli, cauliflower and carrots in the freezer and threw some in the microwave. I also had some uncured 100% beef hot dogs in the fridge. I grilled one up, cut into pieces and mixed into my now steaming hot veggies. Little salt and pepper and I was good to go.
I know it looks kind of weird, but it was GOOD. And filled me up.
After work was over, I decided to head up to Wegmans in Easton, PA. I had never been, but I heard they had a lot of good organic produce and meat. Since Mark is now on the "let's get grass-fed, organic meat" bandwagon I figured I would give this place a try. After a short 30 minute drive, I entered the most beautiful grocery store ever! It's pretty similar to Whole Foods, but was a bit more organized and not as expensive! (Still pricey - you get what you pay for - but not outrageous).

Seeing all of the fresh veggies from local farms was so exciting and got me re-motivated to stay on plan. I couldn't wait to get home to cook up some of the fresh and organic produce I kept piling into my cart. I also found a ton of beautifully packaged and reasonably priced organic, grass-fed beef and pork as well as some deli meat that didn't have any additives. You know your sliced turkey is minimally processed when it only has 3 ingredients: organic turkey, water and salt. Sounds like a good, quick source of protein for my Whole30!

Once I got home, Mark was ready to try some of the steak. He wanted to really enjoy the better quality meat, so he asked that I only add EVOO, salt and pepper.

It's incredible how deeply red and lean these cuts of meat were. Extremely tasty too.
To accompany our steaks, I made a fresh salad with spinach and mixed greens, bell peppers, cucumbers, carrots, some of those oddly shaped tomatoes and topped with some warm beets that had already been drizzled with EVOO, salt and pepper.

Delicious.

Mark's plate looked exactly as mine and I congratulated him for enjoying his first completely Whole30 approved dinner. He felt satisfied and didn't miss the usual potato that he typically enjoys with his steak. I think we're getting somewhere!

On another note, someone asked what I have been drinking with my meals. I am drinking only water and I had black coffee a few times last week. But that isn't a huge change for me. I've always been a big water drinker.  I'm just not having the occasional diet beverage that I used to have.  You can have club soda or all natural sparkling water (read the labels - no added sugar or artificial sweeteners allowed!)

Again, refilling my fridge with good eats has rekindled my Whole30 fire. I know I can do this and preparation is key. I can't let myself get to a point where I don't have good choices in front of me to choose from, like this morning. If it wasn't for having that Larabar, I might have caved in. But there is no room for failure here. 

Tomorrow will be Day 7.

My Whole30 - Day 5

Day 5. What can we say about Day 5? I kind of feel as though I've been doing this forever and I'm ready for a cheat meal. I'm just being honest here. That's usually how all of my diets go. I'm good for about a work week (4-5 days) and then I have a cheat meal because I've been soooo good for a whole 5 days!! But I'm not going to let that happen now.

DAY 5 - WHOLE30 EATS

After sleeping in, blogging, and then giving Momma Pops a big birthday hug, I was feeling pretty hungry!  Even though it was her birthday, she still insisted on making me breakfast. It was a wonderful 3 egg omelet that I topped with some fresh guacamole (I made the guac!).

 We then spent the rest of the morning and early afternoon helping the Pops with some things that needed to get done around the house. It wasn't long before we were famished again. The boys requested pulled pork sandwiches, which smelled SOOO GOOD. I tried hard to resist (curse you sugary bbq sauce!!!!) and started scouring the fridge for what I could eat.

Much to my delight, I was able to put a beautiful lunch together!

We left MA much later than we had originally planned, but it was worth it to spend time with Momma Pops on her birthday and to have all of her sons at home at the same time. It rarely happens. 

 Once we got on the road, we made a pit stop at Whole Foods to pick up a few items that are hard to find in our local PA grocer. I picked up this Larabar which is totally Whole30 compliant since its ingredient list consisted of 3 things: dates, walnuts and bananas. Sounds like real food to me! We ended up hitting traffic and the weather was a bit crappy, so this came in handy along the way.



At around 8pm or so, Mark got hungry and wanted to have a full meal. I know this sounds very against Whole30, but we went to Chili's! (Shocking, I know!) It was yet another test of will power. 

I ordered the grilled chicken sandwich sans bun, honey mustard, and swiss cheese and substituted the fries for steamed broccoli. I added avocado slices for $.79! I also ordered a house salad, with no cheese or croutons and oil and vinegar on the side. Everything was tasty and I believe I successfully navigated a fast food chain! Mark's fries did look amazing, but I kept my head down and stared at my beautiful broccoli. ;)

This actually ended up being too much food. I left half the salad but ate all of my protein and broccoli.
Before I close, I would like to give my husband some additional props. For the last 2 hours of our drive, he read to me from the book "It Starts with Food." Not only was I able to get ahead in the book, but Mark learned a few things and I think I'm winning him over! He started saying things like,  

"If we're really going to do this, we're going to have to budget more money in for our groceries. I want my meat to be grass-fed, good quality stuff."  

It was music to my ears. Plus, when was the last time someone read to you?! It was awesome. Mark also added some great witty commentary. If you know him, you know what I'm talking about. 

Here's to a successful Day 6 - in the comfort of my home. It should be easier, right?

My Whole30 - Day 4

Since on the Pops family side we have a TON of August birthdays, we like to have one big party to celebrate everyone, including me and Mark! The challenges of a family gathering/cookout while on Day 4 of the Whole30 were many:

Explaining why I'm on the Whole30
- some were receptive and/or interested in trying themselves
- some told me it was a load of bs and that I should eat whatever I want
- some were offended that my explanation meant I wouldn't be eating the dish they brought

Being watched like a bandit
- People kept asking me what I would be eating and checking out my plate. Some reactions were positive, some were not.

Having a birthday cake to celebrate your birthday and not being able to eat a slice
- enough said.

It was tough but overall I still ended my day without caving in. I navigated to food wisely and reminded myself why I was doing what I was doing: not JUST for weight loss but to live a healthy lifestyle.

DAY 4 - WHOLE30 EATS

9am: the usual breakfast bowl with sunflower seeds this time.

We had an action packed morning getting ready for the party and prepping lots of food.

2pm: veggie-turkey concoction. Momma Pops was making her famous turkey chili. Before she put some of her secret (but not Whole30 compliant) ingredients, she put about a cup on the side for me. We tossed that with some left over cauliflower and veggies and I had myself a very filling lunch before the party started at 4pm.
VERY yummy. And SPICY!

PARTY TIME

There were a few safe foods that I made my best friends: a fruit salad and my homemade fresh salsa. I paired those with some grilled chicken wings and steak.


I was feeling good and on top of my game until dessert time. We sang happy birthday to everyone and I quickly grabbed some more fruit and left the dining room as soon as I could.

Yes, EVERYONE get's their birthday number on the cake. Might be a fire hazard, but everyone gets recognized!

But then everyone followed me with their cakes and other desserts. I tried my best to look straight at the TV and watch those amazing Olympians instead of my family around me. Those Olympians are most certainly dedicated and probably feed themselves whole, real foods too. Those Olympians probably skipped dessert many a times for the sake of their careers. Those Olympians were my heroes at that very moment.

After everyone left, I still felt like I wanted dessert. I was craving it BAD. I then thought through what I was feeling and convinced myself that if I was still hungry I would eat real food. So I found a piece of leftover steak and some chicken wings and ate those. I felt better in terms of the craving but then felt a little bit of food regret because I felt as though I only ate that extra protein so that I wouldn't eat the cake. Was I truly still hungry? Did I make the right decision? Should I just have waited it out?

Instead of beating myself up over it, I decided to go snuggle on the couch with my husband. His snuggles are the best. His snuggles make me feel safe.  And then he was my hero.

My Whole30 - Day 3

The
I have to admit that Day 3 had a couple of challenging moments. First off, it was the first time I started to think about bad food. Thoughts of waffle fries and onion rings kept flashing through my head. It was weird.

Thankfully, I still managed to stay on plan the whole day.

DAY 3 - WHOLE30 EATS

9:30am: enjoyed another fruit, nut, and coconut milk bowl - today with pecans. Also half a cup of coffee.

12:30pm: using some of the left over veggies from the day before, I made a serious egg scramble with avocado and fresh cilantro. So filling.

After I finished up with work, we decided to head down to the beach and have dinner with family friends. I have to be honest that I was getting a little nervous because I wouldn't have control over what was being served for dinner. I remained hopeful that I would have the willpower to resist any temptations. We did pack the cooler with good snacks so at least I had those! On the drive down, I munched on some delicious red grapes and had a plum during the time we were at the beach.

We walked back to the wonderful beach house we were having dinner at and washed up in the outside shower. (which was really cool by the way!)

Our lovely hostess put out a beautiful spread of chips and salsa, pita bread and hummus, artichokes, feta cheese and olives. I would have LOVED every bit of it 3 days ago. But the safest thing I could eat were the artichokes so I had a couple of those and kept my eyes off the platter. Momma Pops even took one for the team by eating the feta cheese cubes before I came to the plate. Thanks Momma. Cheese is definitely one of my weaknesses.

For dinner, there was a large salad (score!), baked potato, green beans and steak. Perfect! I could make a great plate - minus the potato. I was very excited.

Instead of using the salad dressings that were put out, I scouted out some EVOO and added a little bit to my salad and some salt & pepper. One bite into the green beans and I realized they were cooked in butter. It was a delicious bite, but unfortunately I had to stop eating them. The steak was great but again I got concerned about the potential sugars in the marinade. I still ate the steak because it was simply out of my control and I was H-U-N-G-R-Y.

After heading back to the beach to view the craziest red moon, we made our way back to the Pops residence.

On the drive home, the Pops family decided to stop at Dairy Queen. Wow, endless night of challenges, huh?

I quietly stood in the car while Mark gathered everyone's ice cream orders. Mark was ever so kind to bring me two plums out of the cooler so I could also have a sweet treat. Thank you baby! You've redeemed yourself from your Day 1 incident! ;)

Believe it or not, I didn't feel too bad about missing the ice cream. I didn't really want any and I didn't find it too hard to resist. Go me. After all, you can't beat indulging in nature's candy!

Just keep telling yourself that, just keep telling yourself that.

My Whole30 - Day 2

I would like to attribute Day 2's success to my wonderful mother-in-law, Momma Pops!

Visiting family can be tough on a diet when Momma cooks yummy, comfort foods. But my Momma Pops knows about my goals and my weight loss journey and she tries to help me as much as she can! In preparation for our visit, she gathered lots of fresh veggies from the local farmer's market and made sure to have some fresh eggs and lean protein. Plus the fruits and veggies I brought along in my cooler - I had no excuse but to eat wonderful whole foods. It was a good day.

DAY 2 - WHOLE30 EATS

8:30am: I was extremely tired this morning so I started my day with half a cup of coffee and my fruit, nut and coconut milk bowl. So delicious.

The second day of the month is always super busy at work, so I grabbed my work laptop and hid myself in a corner in Mark's little brother's room until about 1pm.

1pm: LUNCH TIME. I was pretty hungry by this point, probably since I didn't have any real protein for breakfast. So we loaded up on the protein at lunch. Momma Pops made me (I know, I'm spoiled) a beautiful 3 egg omelet topped with fresh cherry tomatoes from the market, avocado and some fresh cilantro.

After chatting for a bit with the Pops, I took my heiny back to my work corner and plugged away til 5pm.

5pm: At this time, I was feeling pretty hungry again. I decided to have two small plums. They were so juicy and ripe that when I bit into one, the juice squirted onto Momma Pops arm. Believe it or not, she still loves me! (You do, right?)

7pm: Momma Pops and I started to cook dinner together and I knew we weren't going to be eating until 8:30-9pm since we were waiting for Mark's bro and friend to arrive, so I decided to have a small banana to hold off the growing hunger. That really helped.

DINNER PREPARATION:

Momma Pops wanted to try a new recipe for a chicken marianade that had fresh basil, fresh mint, lemon juice, lemon zest, olive oil, and a jalapeno! The preparation looks so beautiful and vibrant:

Just looking at all of the green and yellow on the boneless/skinless chicken breasts were exciting to me! Couldn't wait to throw those babies on the grill!
We then prepared a TON of veggie side dishes: roasted cauliflower (not pictured), roasted veggie medley, and some amazingly deep purple beets!

I've tried beets twice before and I wasn't really a fan. BUT THESE BEETS WERE DELICIOUS. I was pleasantly surprised.

Seriously, this Whole30 should be easy if I can eat like this everyday!

Everything was scrumptious. And one thing we realized is that between all of my meals, I enjoyed EVERY color of the rainbow! I am positive that I filled my body with an array of different vitamins and minerals and my body is thanking me. All day I was satisfied with my meals. I didn't feel like I was missing anything. Sure, I didn't have any wine with dinner or rice pilaf - but my plate was FULL of delicious foods and I didn't miss a thing. And I certainly didn't feel like I was on a 'diet.'

What I have been enjoying so far with eating this way is that I don't have to count calories or points or weigh out my portions like a crazy lady. I just have to pile my plate with GOOD, REAL food and know that I'm staying on plan. We shall see how this all adds up in the weight loss department, but it really is about so much more than that. I feel so good about myself knowing that I'm feeding my body what it needs and what it truly desires: nature's buffet.

My Whole30 - Day 1

Wow. Yesterday was quite an eventful day for a couple of reasons.

1. You like me, you really like me!

My blog received the most number of hits in a day than even before! For a newbie blogger, this really excites me. I can’t believe so many people are interested in what I have to say and it was so encouraging to receive so many positive comments. LOVE YOU ALL and THANK YOU FOR READING!

2. I successfully completed Day 1 of the Whole 30!
Since I had already been cutting out most of the processed foods from my diet for the last month or so, I didn’t find it too difficult to stay completely on the program yesterday. Cutting out dairy and added sugars is new for me during this month, but I’m giving it my best shot! Plus – I have had cheat days over the last month, but cheat days over the next 30 days are NOT ALLOWED. If I cheat, I have to start Day 1 all over again. That’s just how it works and I’m okay with that.

DAY 1 - WHOLE30 EATS

7:30am: I enjoyed an extremely filling breakfast of a mega-veggie scramble, roma tomato and 1/4 avocado. Boy, was this filling and tasty. I was full ALL morning.

NOON: I started to feel hungry but I didn’t have time to make lunch yet, so I munched on some watermelon. So refreshing.

1:30pm: I quickly made some balsamic chicken with two skinless/boneless chicken thighs and threw it on top of some mixed greens, 1/4 avocado and 1/2 head of roasted cauliflower. Another super filling meal.

Quick balsamic chicken: little olive oil, balsamic, stoneground dijon mustard, onion & garlic powder, dried rosemary, salt, pepper and juice from 1/2 lemon. Let marinate for 15 minutes, then cook in a saucepan. Super easy and super delicious.
6:30pm: Mark and I were making a trip up to MA tonight, so I wanted to make sure we had dinner first. NO FAST FOOD/REST AREA FOOD FOR ME! So I made a quick stir fry with skinless/boneless chicken thighs and a huge bag of veggies! I fried it up in coconut oil and seasoned with turmeric, ginger, cumin, chili powder, garlic, salt, pepper, and added a little chicken broth to make it saucy towards the end. It was tasty. Not my best, but I was in a hurry and just threw it all together. Still good though.

Since we were going on a 5 hour road trip, I wanted to make sure that we had good, healthy snacks for the trip. There’s something about driving for long periods of time that makes me SOOO SNACKY. It also keeps me awake! So I packed a cooler full of fruits, veggies, nuts, and water.

My saving grace. After Jesus, of course.
It came in handy when my wonderful husband decided he wanted to stop at McDonalds halfway through CT. I mean, really? Don’t you know what I’m trying to do here? Have you been listening? We don’t even eat at McDonalds regularly anyway. This guy is crazy. I stop anyway since I had to use the restroom and told him to order himself a grilled chicken sandwich with NO FRIES. Fries have always been my weakness and I didn’t want it around me! I come out of the bathroom and WHAT DO I FIND?

A large order of fries?!?!?!?!!?

Men.

I was so mad and demanded my blueberries. All was better with the world at that moment. Those blueberries saved my life.

I made it the rest of the way, nibbling on fruit and a handful of pecans but didn’t make it to bed until 2am. I was exhausted.  I know that getting a good night's rest is part of the Whole30 too, but we left so late from PA. Nothing I could do about it.

All in all, Day 1 was completed successfully. GO ME. Only 29 days to go. It is so true that the only way to be successful is to plan, plan, plan. If I hadn’t packed that cooler, things could have ended differently last night.

Slow and Steady Wins the Race, right?

In April 2011, I posted a series of pictures that displayed my weight loss progress. It's one of my most visited blog posts  - read it here. It's been over a year since I've taken a picture in the same workout outfit, so I figured it was time.

With the start of the Whole30 program, it's recommended that I take a "before" picture so I decided to compare this before picture with my previous before pictures (so does that make this a 'during' picture?)

This is my progress over the last two years:

What do ya think?
To be honest, I thought I would be much closer to my goal weight by now, but it is what it is. I still see progress though:
  • Looks like I've lost some boobs (not sure if that's 100% progress, I kinda liked my boobs!)
  • The shirt looks much more baggy in my belly area
  • And I think my lower legs look slimmer! Could those be smaller ankles? 
I'm still far away from where I want to be, but it's comforting to know that I'm getting closer. And at least I haven't gone back! Forward progress equal progress, nonetheless!

After all, slow and steady wins the race, right?
