Whole30 2014: Days 11-20


Two thirds of the way complete with our Whole30! Again, I say it has been so easy this time around! I'm taking advantage that our little Belle is asleep so I'm keeping this post short and sweet. May the pictures speak for themselves.

I decided to make a big batch of chicken breasts for emergency protein. They were simply seasoned with salt and pepper and cooked in the cast iron skillet in some ghee.
Some of that emergency protein with roasted butternut squash and rutabaga and of course, the walnut pesto sauce.

Ground Beef Stuffed Omelet with Avocado Recipe

Amore is right.
We desperately needed to go food shopping last week so the options for breakfast were limited this particular morning. I had eggs, leftover ground beef and an avocado. Sounds like a meal to me! Plus, leftovers are my favorite. You've probably heard me say this a million times. Leftovers almost always taste better than the day you made the food and they make eating a healthy diet with a busy schedule so easy. 

So I decided to make an omelet with the ground beef and top it with avocado and fresh cilantro. My homemade salsa would have also been wonderful, but I didn't have any in the fridge - tragedy, I know. I found this quick meal to be yummy and very filling. Nothing like a big serving of protein and good fats to get you going! 

Ground Beef Stuffed Omelet with Avocado Recipe

Recipe Ingredients: 

2-3 organic eggs (I used 2 jumbo)
1/2 cup of cooked ground beef, divided
1 tbsp of olive oil
1/2 avocado, diced
Pinch of salt
Fresh cilantro 

Recipe Directions: 
1.) Heat a small pan over medium heat. 
2.) Scramble the eggs and add the adobo seasoning. 
3.) Warm up the cooked ground beef, about 30 seconds in the microwave. 
4.) Add enough olive oil to coat your medium-hot pan, about a tablespoon. 
5.) Pour the scrambled eggs into the oil and let set for about 20-30 seconds. 
6.) Add half of the ground beef mixture to the eggs as they cook. 
7.) Once the eggs are almost set, fold over half of the eggs to create the omelet and seal all of the ground beef inside. 
8.) Once the egg is fully cooked throughout, remove and place on plate. 
9.) Top with diced avocado, a pinch of salt, and fresh cilantro. 
10.) Dig in! 

5 Foods I Don't Feel Guilty for Craving During Pregnancy

 
My husband said the following to me the other day:
"When you first got pregnant, I didn't know what to expect. I sort of expected you to totally indulge in all the crazy pregnancy cravings I've ever heard of, especially since when you're typically PMS-ing you crave salty and sweet. And that would have been fine, because hey, you're growing a tiny human and that's hard work. But I am so relieved that you're actually craving really healthy stuff. Baby, I will buy you as many watermelons as you want - any time of day!"
I think I may have gotten teary eyed. Some may have taken offense that my husband was concerned I would blow up like a house during this pregnancy, but not me. I was touched by the fact that he noticed that I was trying my best to make healthy food choices - with the occasional indulgence.

To be totally honest, baby has been helping me. I really am not craving cakes, brownies, ice-cream, or cookies, like I thought I would be. I am often craving just 5 things: watermelon (with lime), mango (with lime), grapefruit, avocado, and plantains (unripe and ripe).

AND I DON'T FEEL GUILTY ABOUT THESE CRAVINGS AT ALL!

Here's why:


Watermelon with freshly squeezed lime juice is what got me through my first trimester. When nothing else was appealing or would stay down, watermelon always did the trick. This was my very first craving and it has remained strong throughout the last 5 months. Since it was still winter when I first started craving watermelon, they were hard to come by and my husband even spent $9 dollars on a half watermelon! Oh, but it was so worth it. What a good hubby.

According to the article "Watermelon Wonders" found on www.fitpregnancy.com:
Watermelon eases heartburn and reduces swelling; its high water content (92 percent) and fruit sugars alleviate morning sickness and dehydration; and the minerals it contains can help prevent third-trimester muscle cramps. Ounce for ounce, watermelon is richer than tomatoes in lycopene, an antioxidant that protects against cancer and cardiovascular disease, boosts the body's immunity to infections and naturally raises the skin's SPF, according to Steven Pratt, M.D., author of SuperFoods Rx (HarperCollins).

Even better news for pregnant women: A study in the International Journal of Gynecology and Obstetrics found that daily lycopene supplements reduced the incidence of preeclampsia by 50 percent. Test subjects were given 4 milligrams of lycopene; a single serving of watermelon can have triple that amount. What's more, scientists have discovered that watermelon is packed with vitamins A, C and B6, as well as potassium and magnesium. These nutrients are important for the development of your baby's vision, brain, nervous and immune systems, and more. For you, potassium regulates water balance in the blood and body tissues during pregnancy. And you get all these benefits for less than 50 calories per cup.
Bring on the watermelon! Adding the freshly squeezed lime juice was just something I discovered by accident, while I was cutting watermelon and trying to make guacamole all at the same time with my next craving: avocado. A piece of watermelon touched some lime juice on my cutting board and I was in heaven. I've been adding lime juice to many things as baby really enjoys sour!


Now, when I knew I needed some type of substance in addition to my watermelon I turned to my BFF the avocado. I knew the healthy fat content would keep me full a little longer and hopefully keep the nausea at bay. Sometimes I'd just eat a whole avocado for lunch and call it a success. Now that I'm able to eat more complete meals, I still try to add 1/4-1/2 an avocado to my meals - either as guacamole or just topping it with some diced pieces. It always satisfies.

According to this article, "Avocados are good for pregnant women since the high folate content in them helps in the development of brain and other tissues of the baby.  The B6 vitamin in these fruits may help in reducing nausea that is associated with pregnancy." 

Sounds like a win-win!

My craving for grapefruit came on all of a sudden. I have enjoyed grapefruits in the past, but it was a while (maybe even years) since I've had one. Then one morning, they just came to mind and I HAD TO HAVE ONE. ASAP. I went grocery shopping that night and ate a very large grapefruit while I was driving home, and it was heavenly. Again, sour things have been very appealing! Plus, grapefruit is an excellent source of Vitamin C and Vitamin A, and a good source of fiber, potassium, Vitamin B5, and Vitamin B1 according to this article. And I find them very filling.

So mangoes are my absolute favorite fruit in the world. To me, there is nothing better than eating a ripe, juicy mango - hands all sticky and everything. Whenever I am looking for a snack and find a mango waiting for me, I rejoice. It is always the perfect snack, a perfect addition to a salad, or even a perfect side dish. I just love them. I love them so much that my grandmother actually ships me mangoes as a gift. I love that lady. The mango pictured above is actually one that my grandmother shipped to me. It was perfect. God bless her.

Like the other foods listed here, mango is also very nutritious. It is an excellent source of Vitamin C, Vitamin A, and Folate - great for baby! It's also a good source of Fiber, Vitamin B6, and Copper.

Again - no guilt here!
Lastly, the plantain. My grandmother also ships me plantains because she doesn't believe we can find good ones here in PA. Either unripe and fried up as tostones or very ripe and sauteed as amarillos/maduros, plantains have been another staple during these months of pregnancy. They are denser and also help to keep me full.

Not many people realize that plantains are actually quite nutritious, since they are typically fried in Caribbean cuisine. However, I fry them in olive oil (a good fat) so I'm not concerned! Plantains contain significant amounts of Vitamins A, C, B6 and Folate, so I feel no guilt enjoying them!


So those are the 5 foods that I don't feel guilty for craving during my pregnancy. Now, of course things haven't been perfect. Over the last week, I've developed a craving that I'm not so proud of: crackers with a thin layer of mayonnaise on top. Hey - you win some, you lose some!

Whole21* - Day 6 & A'sha's Visit Continues!

The picture to the left is so ME. I am truly at my happiest when I'm in the kitchen, my hands covered in spices that will soon make my meal so delicious, and wearing a "Wild Woman" apron. What could get better?

My sister took this picture last night as I was excitingly making dinner for both her and my friend A'sha who was spending the weekend with me. It was a REALLY good time, but I'll get into more detail about that a little later on. 

Whole21* Eats - Day 6

Meal 1: We slept in on Saturday morning so I decided to make a large brunch when we finally woke up. We were ravenous. I made sweet potato hash with sausage and topped with avocado and fresh cilantro - along with some fried eggs. It was so satiating.

Over breakfast, Mark and I shared with A'sha our new approach to eating and tried to explain some of the key learnings from the book "It Starts With Food". As a medical student, she was very intrigued but had a lot of questions. I encouraged her to read the book for herself. When A'sha's parents called to check in, A'sha started telling them about what we were discussing and they became interested too! Now they all want to try a Whole30! I love it. Spreading the good food word.

After talking all afternoon about nutrition, we decided to do some shopping! My sister works at the nearby outlets, so when we went to visit her, we made plans to all hang out for dinner.

I LOVE to cook for others and it brings me so much joy to see people enjoy my food creations, so I was very excited to put together a great dinner meal.

Meal 2: As you can tell from the picture above, I decided to season a whole chicken with my typical roasted chicken recipe. It's how my mother taught me how to make pollo al horno (chicken in the oven) with some additional tweaks I've made over the years of cooking on my own.

There's plenty of garlic, oregano, parsley and some Puerto Rican spices. This chicken is what Mark's family just lovingly calls "Sara's Chicken". I don't really measure anything when I make this chicken (or when I cook in general), so one day I'll have to try to really observe what I do so I can share this recipe with all of you!

I paired the chicken with mashed cauliflower and my roasted butternut squash recipe. The girls really loved it and I was thrilled to see them practically lick their plates and go up for seconds. There's no better compliment than that. 

We spent the rest of the night sharing stories, laughing uncontrollably, and showing my sister some of my crazy dance moves. Not that she doesn't know - but I like to remind her that her big sister still got it!

Whole21* - Day 3

It's so cold here today!


My poor hubby left the house this morning and it was only 18 degrees out! Brrrr. Days like these I'm so grateful to have the opportunity to work from home. Thank you, God.

Food-wise, today was another good Whole30 day in the bank - I ate lots of yummy food and felt very satisfied. I like these days.

Whole21* Eats - Day 3
1/2/13

Meal 1: 2 eggs fried in a little ghee, 1/2 an avocado and 1/2 a banana. Yum.

Meal 2: Using the chicken and veggie leftovers from last night, I made a quick chicken soup with some homemade broth I had in the freezer. It was exactly what I needed on this cold day, especially since I am still pretty congested.
Meal 3: EPIC burger night! We topped our grass-fed organic beef with a fried egg, homemade guacamole, organic bacon and homemade salsa and stuffed them inside some lettuce wraps. Messy and fun!
I also fried up some green plantains to make tostones - great for dunking in the leftover guac!

Another great thing about today was that I was fully satisfied with all of my meals that I didn't feel the need to snack at all. I was also really busy with work, so I'm not sure if I just didn't have the time to think about snacking. I do admit that sometimes I eat out of boredom. I'm trying to work on that.

Anyway, hope everyone is enjoying the beginning of 2013!

Sweet Potato and Sausage Frittata Recipe

 

 We decided to start off the New Year with a big, hearty breakfast so I decided to make a frittata with some of my favorite ingredients: sweet potato, sausage, cilantro and avocado. Frittatas are super easy and can be made with whatever ingredients you have in your fridge!

Sweet Potato & Sausage Frittata Recipe

Ingredients:

6 eggs (we use organic, cage-free)
1/2 large sweet potato, cooked and diced
6 all-natural pork sausage links, cooked and diced
1-2 TBSP fat of choice (we used ghee)
1-2 TBSP of freshly chopped cilantro
1/2 ripe avocado, diced
ground cumin, to taste
salt and pepper to taste

Directions:

1. Heat a medium sized cast-iron skillet over medium heat and set your oven broiler on high.
2. If you're working with leftovers for the sweet potato and the sausage, you can skip this step. If not, make sure to cook the sweet potato in the microwave, and cook the sausage links in a separate pan. Chop both the sweet potato and sausage into bite-sized pieces, once cooked.
3. In a medium sized bowl, whisk the 6 eggs with  salt, pepper, a sprinkle of ground cumin, and 1 TBSP of the fresh cilantro.
4. Once the cast-iron skillet is heated (I wait until it starts to smoke just a little), add 1-2 TBSP of fat of your choice. We used ghee, but you can use coconut oil, olive oil, etc.
5. Pour egg mixture into the oiled cast-iron pan and add both the sweet potato and sausage pieces.
6. Once the egg is just set on the bottom and sides, carefully place the skillet into oven. The broiler will cook the top of the frittata, without you having to flip the massive thing!
7. Keep an eye on the frittata as it can cook pretty quickly with the broiler on high. In about 3-4 minutes, your frittata should be nice and golden brown on top and fully cooked.
8. Remove from oven, let rest for a minute or so and then serve! I topped our frittata with fresh avocado and the rest of the fresh cilantro.

This meal was incredibly delicious and very filling! It's a great serving of protein, good carbs, and good fats to keep you satiated for many hours!
