My Whole30 - Day 1

Wow. Yesterday was quite an eventful day for a couple of reasons.

1. You like me, you really like me!

My blog received the most number of hits in a day than even before! For a newbie blogger, this really excites me. I can’t believe so many people are interested in what I have to say and it was so encouraging to receive so many positive comments. LOVE YOU ALL and THANK YOU FOR READING!

2. I successfully completed Day 1 of the Whole 30!
Since I had already been cutting out most of the processed foods from my diet for the last month or so, I didn’t find it too difficult to stay completely on the program yesterday. Cutting out dairy and added sugars is new for me during this month, but I’m giving it my best shot! Plus – I have had cheat days over the last month, but cheat days over the next 30 days are NOT ALLOWED. If I cheat, I have to start Day 1 all over again. That’s just how it works and I’m okay with that.

DAY 1 - WHOLE30 EATS

7:30am: I enjoyed an extremely filling breakfast of a mega-veggie scramble, roma tomato and 1/4 avocado. Boy, was this filling and tasty. I was full ALL morning.

NOON: I started to feel hungry but I didn’t have time to make lunch yet, so I munched on some watermelon. So refreshing.

1:30pm: I quickly made some balsamic chicken with two skinless/boneless chicken thighs and threw it on top of some mixed greens, 1/4 avocado and 1/2 head of roasted cauliflower. Another super filling meal.

Quick balsamic chicken: little olive oil, balsamic, stoneground dijon mustard, onion & garlic powder, dried rosemary, salt, pepper and juice from 1/2 lemon. Let marinate for 15 minutes, then cook in a saucepan. Super easy and super delicious.
6:30pm: Mark and I were making a trip up to MA tonight, so I wanted to make sure we had dinner first. NO FAST FOOD/REST AREA FOOD FOR ME! So I made a quick stir fry with skinless/boneless chicken thighs and a huge bag of veggies! I fried it up in coconut oil and seasoned with turmeric, ginger, cumin, chili powder, garlic, salt, pepper, and added a little chicken broth to make it saucy towards the end. It was tasty. Not my best, but I was in a hurry and just threw it all together. Still good though.

Since we were going on a 5 hour road trip, I wanted to make sure that we had good, healthy snacks for the trip. There’s something about driving for long periods of time that makes me SOOO SNACKY. It also keeps me awake! So I packed a cooler full of fruits, veggies, nuts, and water.

My saving grace. After Jesus, of course.
It came in handy when my wonderful husband decided he wanted to stop at McDonalds halfway through CT. I mean, really? Don’t you know what I’m trying to do here? Have you been listening? We don’t even eat at McDonalds regularly anyway. This guy is crazy. I stop anyway since I had to use the restroom and told him to order himself a grilled chicken sandwich with NO FRIES. Fries have always been my weakness and I didn’t want it around me! I come out of the bathroom and WHAT DO I FIND?

A large order of fries?!?!?!?!!?

Men.

I was so mad and demanded my blueberries. All was better with the world at that moment. Those blueberries saved my life.

I made it the rest of the way, nibbling on fruit and a handful of pecans but didn’t make it to bed until 2am. I was exhausted.  I know that getting a good night's rest is part of the Whole30 too, but we left so late from PA. Nothing I could do about it.

All in all, Day 1 was completed successfully. GO ME. Only 29 days to go. It is so true that the only way to be successful is to plan, plan, plan. If I hadn’t packed that cooler, things could have ended differently last night.
