My Whole30 - Day 2

I would like to attribute Day 2's success to my wonderful mother-in-law, Momma Pops!

Visiting family can be tough on a diet when Momma cooks yummy, comfort foods. But my Momma Pops knows about my goals and my weight loss journey and she tries to help me as much as she can! In preparation for our visit, she gathered lots of fresh veggies from the local farmer's market and made sure to have some fresh eggs and lean protein. Plus the fruits and veggies I brought along in my cooler - I had no excuse but to eat wonderful whole foods. It was a good day.

DAY 2 - WHOLE30 EATS

8:30am: I was extremely tired this morning so I started my day with half a cup of coffee and my fruit, nut and coconut milk bowl. So delicious.

Who needs cereal when you have this?

The second day of the month is always super busy at work, so I grabbed my work laptop and hid myself in a corner in Mark's little brother's room until about 1pm.

1pm: LUNCH TIME. I was pretty hungry by this point, probably since I didn't have any real protein for breakfast. So we loaded up on the protein at lunch. Momma Pops made me (I know, I'm spoiled) a beautiful 3 egg omelet topped with fresh cherry tomatoes from the market, avocado and some fresh cilantro.

After chatting for a bit with the Pops, I took my heiny back to my work corner and plugged away til 5pm.

5pm: At this time, I was feeling pretty hungry again. I decided to have two small plums. They were so juicy and ripe that when I bit into one, the juice squirted onto Momma Pops arm. Believe it or not, she still loves me! (You do, right?)

7pm: Momma Pops and I started to cook dinner together and I knew we weren't going to be eating until 8:30-9pm since we were waiting for Mark's bro and friend to arrive, so I decided to have a small banana to hold off the growing hunger. That really helped.

DINNER PREPARATION:

Momma Pops wanted to try a new recipe for a chicken marianade that had fresh basil, fresh mint, lemon juice, lemon zest, olive oil, and a jalapeno! The preparation looks so beautiful and vibrant:

Just looking at all of the green and yellow on the boneless/skinless chicken breasts were exciting to me! Couldn't wait to throw those babies on the grill!
We then prepared a TON of veggie side dishes: roasted cauliflower (not pictured), roasted veggie medley, and some amazingly deep purple beets!

Just LOVE the colors here. And the steam.
I've tried beets twice before and I wasn't really a fan. BUT THESE BEETS WERE DELICIOUS. I was pleasantly surprised.

Seriously, this Whole30 should be easy if I can eat like this everyday!

Everything was scrumptious. And one thing we realized is that between all of my meals, I enjoyed EVERY color of the rainbow! I am positive that I filled my body with an array of different vitamins and minerals and my body is thanking me. All day I was satisfied with my meals. I didn't feel like I was missing anything. Sure, I didn't have any wine with dinner or rice pilaf - but my plate was FULL of delicious foods and I didn't miss a thing. And I certainly didn't feel like I was on a 'diet.'

What I have been enjoying so far with eating this way is that I don't have to count calories or points or weigh out my portions like a crazy lady. I just have to pile my plate with GOOD, REAL food and know that I'm staying on plan. We shall see how this all adds up in the weight loss department, but it really is about so much more than that. I feel so good about myself knowing that I'm feeding my body what it needs and what it truly desires: nature's buffet.
