My Whole30 - Day 19-21

Wow, at the end of today I will be 3/4 of the way done with my Whole30 challenge! Time is flying by - and not a cheat meal in sight!

DAY 19 - WHOLE30 EATS

Sunday morning was a little hectic since I slept in and had to make it to church by 11am. I didn't have time to make breakfast so I grabbed a Larabar and a Gourmet Grassfed beef jerky. No pictures, sorry!

After church, I snacked on these awesome little dried fruit snacks that are totally Whole30 compliant!
Totally crunchy and taste just like mango!
For dinner, I went over to my parent's house and successfully resisted the rice and beans.  (I did have to think twice about it!)

And that was pretty much it for Sunday eats! Probably not enough food!

DAY 20 - WHOLE30 EATS

To make up for my lack of food on Day 19, I made myself a pretty hefty omelet for breakfast:

2 eggs, 1/2 sweet potato (cooked), and 2 slices of roast beef, topped with 1/4 avocado

For lunch, I finished off the "morning mix" I made the other day. The flavors definitely got better as the days went on, and heating up with a tablespoon of chicken broth added some moisture and flavor. This time, I added the other half of the sweet potato from earlier in the day and that really made the meal. Gosh, I love sweet potato.


For dinner, I was rushed again since I had to head out to church to facilitate youth practice. I had a couple slices of turkey and one of these beautiful peaches before heading out.


When I arrived back at home, I had some left over roasted chicken and called it a night.

DAY 21 - WHOLE30 EATS
Left over grilled veggies and 2 fried eggs. Sadly, we lost one of our egg yolks in the process.
For lunch, I decided to try out another one of the simple recipes in ISWF, this time for an Indian curry inspired ground beef skillet. Of course, I added a few of my own ideas, but I stayed pretty true to the recommendations in the book.

First, I cut up a head of cauliflower and roasted with EVOO, salt, pepper, cumin, paprika and cinnamon. This was my own idea and added a nice depth of flavor to the overall dish.
While the cauliflower roasted, I sauteed some snap peas and shredded carrots in a saucepan. After a few minutes, I set aside on a plate and added some coconut oil to the pan to cook the ground beef.
I cooked the ground beef in coconut oil, salt, pepper, and sofrito (cilantro, green peppers, onions, garlic). After the ground beef was cooked, I added 1 tbsp of curry powder and 1 1/4 cups of canned coconut milk.

After simmering for a few minutes, I added the veggies in and gave it a big stir!
This was SOOOO GOOD! It's definitely a keeper. And soooooo easy!
Continuing with my culinary creativity, for dinner I made a coconut mango chicken stew/curry/something pretty yummy. The idea came from this recipe I found on Pinterest.  Looked delicious, but based on the simplicity of the ingredients, I thought it might be a little bland. So my mind started churning and I ended up with this:

 

INGREDIENTS: 1 pound of diced boneless, skinless chicken thighs; 2 red peppers, in strips; 1 small onion, sliced; about 2 cups of diced mango; 1 can of coconut milk; 1/2 cup of chicken broth; 3 garlic cloves, minced; salt and pepper; crushed red pepper flakes; 2 tsp of ground coriander; 1/2 tsp of ground cloves; freshly grated ginger; sprinkling of ground cumin; fresh mint, minced;  cashews, roughly chopped.

WHAT I DID:
- Seasoned the chicken with salt and pepper and cooked in some coconut oil until no longer pink. Removed from pan and covered with aluminum foil.
-Added some more coconut oil and added the veggies and garlic. After 1-2 minutes, added broth to deglaze the pan and help cook the veggies.  At this point, I also added all of the spices and a little bit more salt and pepper.
-Added coconut milk and brought to a boil, reduced to simmer.
-Added mango chunks and chicken back into pot until mango was warmed throughout.
- Topped with fresh mint and roughly chopped cashews

VERDICT: This was really good and Mark really enjoyed it. He said it reminded him of a curry. I think next time I may also add some curry powder and see what that does to the overall flavor of the dish. Also, maybe even using pineapple instead of mango for another flavor variation. It was a beautiful dish and was both sweet and spicy - one of my favorite combos! Will definitely have again!
